Raw Vegan Brownies

For this recipe you need a food processor.

Ingredients

  • 3 Cups raw walnuts
  • pinch salt
  • 16 pitted medjool dates
  • 2/3 cup (raw optional) cacao powder
  • 1/2 cup dried cherries chopped, or pitted prunes*
  • 1/4 cup raw cacao nibs, or chocolate chips, optional
  • 2 teaspoons filtered water

*Liz tip: prunes are way less expensive than cherries.

 

Directions

1. Place the walnuts in the food processor and coarsely chop.  Remove 1/2 cup of the walnuts and set aside.  

2. Add the salt and process until the walnuts are finely ground.  Add dates and continue to process until the mixture starts to come together.  Add the cacao powder and process to incorporate. 

3. Add the chopped walnuts, dried cherries (or prunes), optional cacao nibs, water and process briefly, just until mixed.

4. Transfer mixture into an 8-inch square glass baking dish and press down with your hands to compact.  Cut into Squares. Cover and chill in the fridge or freezer.
